
The thing I like best about being home is that I can choose to cook whenever I want and whatever I want even if it means something queer and grotesque like this Chinese Wolf-berry cake "枸杞蛋糕" which I tweak from the recipe of an Orange cake. It taste a little like a butter cake with raisin but the after-taste of the wolf-berries is a dead giveaway
ingredient

Butter 135g
Castor sugar 120g
Egg 3
Vanilla essence 1tsp
Self Raising flour 190g
Fresh Milk half cup
Wolf Berries 30g

Cream butter, castor sugar until light and fluffy.
Add one egg at a time and beat until light (approx 2 minutes per egg)
Add in vanilla essence
Add half of the wolf berries to the mixture, mashed it and mix it well.
Sift and add in the raising flour and milk alternately. Starting with flour and ending with flour for a better texture.
Add in the rest of the wolf berries
Pour the mixture into a greased pan and it is ready to bake.

Here’s the tricky part, I used a Micro-computer rice cooker to bake this one, I just have to set my cooking time to 50 minutes. So I am not really sure about the baking time that you need to for your make of oven. So I suggest you start with a low temperature heat like 180’C for about 30 minute. When it is done poke a toothpick in the centre of the cake to see if it is done if not at about 10-15 more minutes.
