Welcome to the xniquet-wiki, a free and fun encyclopedia that collects its fun facts from the blog sphere. What started off as just a write up about my own self for has slowly evolved into this - an encyclopedia about xniquet and his friends in the blog sphere. A long piece of essay about me wouldn’t do my readers any justice and all it is going to be long and boring. So this is how I conceived this idea of turning an about me essay into an encyclopedia filled with fun facts and things that you will find revolving around my blogging life and my blogging friends’ lives too. I do hope that my blogger friends can too contribute their facts in making this wiki more complete. A Wiki must have some people dedicated to ensuring its survival. This one is no different. 05/04/10 Playlist

Music is only second on my list of my favorite things in this world – Well, you might think that sex is on top but sad to say these days, it falls below music and that would mean breaking someone face is on top of my list but then again I have never broke anyone’s face YET but that won’t stop me from making it number Uno. Unlike sex, music is always satisfying all the time (unless I am not doing it right or the girls here just suck at it) and do you know how fulfilling it is to discover new bands and new styles of music to add to my collection? It is better than cumming because you don’t need a towel or to clean yourself up after-wards. So, I just wanna take the time to share these bands with you guys, in hopes that you will be equally inspired - like I was! The playlist is a vital part of my daily routine; I can’t workout or do anything without it. 09/12/09 Revamp

The xniquet-wiki will be undergoing massive revamp and updates for the whole month of December 2009. Section will be updated, new bloggers will be added and new segments will be included in. In the mean time, updates will not be that frequent but if there is any, it will be highlighted.

01/05/09 On Hiatus: xniquet in India

xniquet will be in India for about 6 months hence this wiki will not be updated so often, especially The Fucking Cooking section will be on full haul ; while other section like the reviews and DIY section will not be updated that frequent to. That will be the same with the download section. In the mean time, you can read about xniquet journey through India in in his blog under the label : INDIA For more pictures of xniquet in in India please refer to his facebook. A new section will be added here that would be called "xniquet's journey across India" to pinpoint his current location in India.

Chinese Wolf Berry Cake

The thing I like best about being home is that I can choose to cook whenever I want and whatever I want even if it means something queer and grotesque like this Chinese Wolf-berry cake "枸杞蛋糕" which I tweak from the recipe of an Orange cake. It taste a little like a butter cake with raisin but the after-taste of the wolf-berries is a dead giveaway

ingredient

Butter 135g

Castor sugar 120g

Egg 3

Vanilla essence 1tsp

Self Raising flour 190g

Fresh Milk half cup

Wolf Berries 30g

method

Cream butter, castor sugar until light and fluffy.

Add one egg at a time and beat until light (approx 2 minutes per egg)

Add in vanilla essence

Add half of the wolf berries to the mixture, mashed it and mix it well.

Sift and add in the raising flour and milk alternately. Starting with flour and ending with flour for a better texture.

Add in the rest of the wolf berries

Pour the mixture into a greased pan and it is ready to bake.

Here’s the tricky part, I used a Micro-computer rice cooker to bake this one, I just have to set my cooking time to 50 minutes. So I am not really sure about the baking time that you need to for your make of oven. So I suggest you start with a low temperature heat like 180’C for about 30 minute. When it is done poke a toothpick in the centre of the cake to see if it is done if not at about 10-15 more minutes.

Spicy Chicken in Young Coconut Water

Boneless chicken, thin strips 1/2 cup

Tender coconut water 1 1/2 cups

Tender coconut flesh (malai), chopped 1/2 cup

Green chillies, halved 2-3

Chicken stock 3 cups

Oyster mushrooms, roughly sliced 5 large

Kaffir lime leaves 4

Salt to taste

Fish sauce 1 tablespoon

Sugar a pinch

Lemon juice 2 tablespoons

Fresh coriander leaves, chopped 2 tablespoons

method

In a non-stick pan, roast the coconut flesh with green chillies until brown.Bring the chicken stock to a boil in a large pan; add the chicken, coconut water, roasted coconut and chillies, oyster mushrooms, lime leaves and salt. Bring once again to a boil. Lower heat and simmer until the chicken is tender. Stir in the fish sauce, sugar and lemon juice. Serve hot, garnished with coriander leaves.

Pavakkai Chips (bitter gourd)

Pavakkai (bitter gourd) – 2 to 3

Lemon juice – 1 table spoon

Corn flour – 1 table spoon

Red chilli powder – 1 tea spoon

Turmeric powder – 1/4 + 1/4 tea spoon

Asafetida powder – pinch

Salt – as per taste

Cooking oil – for frying

method

Wash and cut bitter gourd into thin round pieces; add lemon juice, a pinch of salt and 1/4 tea spoon turmeric powder; marinate for at least 30 - 45 minutes (to remove bitterness).Drain, squeeze out excess water completely; add salt, 1/4 tea spoon turmeric powder, chilli powder, asafetida powder, rice or corn flour, mix well and keep for 10 minutes.

Deep fry in low flame, spread it on a white paper or kitchen tissue to remove excess oil. Crispy Pavakkai (bitter gourd) chips are ready.

I'm not gonna show you how the burger is being put together because I believe in the creativity of each individual in doing so. So this is just going to be the recipe of the heart and core of this dish, the beef patty.

ingredient

-Choice cut Beef

- 1 egg

- breadcrumb
- 1 large onion

- 2 cloves garlic

- chili flakes

method

Put the fucking choice cuts, onion and garlic in the food processor to fucking do its fucking job. Ground beef is also a good alternative.

flatten the beef, break the egg and sprinkle the chili flakes and then mix it well.

flatten it again and sprinkle the breadcrumb on top and then mix it again.

divide it into equal potion...

then shape it into beef patty and seal it in cellophane wrap and refrigerate it for at least 3 hours before grilling the crap outta it.

* 2-3 tbsp chili paste

1 cup tempoyak /fermented durian
4-5 cups water
salt to taste

method

In a pot add 3/4 water, Patin fish, blended ingredient and then slowly boil on slow heat.

When it comes to a boil add in the remaining ingredient and water and bring it to a boil until the fish is cook.

Mian Feng Gao in Tom Yum Pesto

Pesto Sauce

3 large onion peeled
2 dried chili
Some basil/coriander
3 cloves of garlic
Olive oil/ vegetable oil

Tom Yum Broth

1 Tom Yum Maggie Seasoning cube
3 Coriander roots
A few Kaffir Lime Leaves
1 cup of water

Dough for making Pan Mee (get your own recipe)

Canned mushroom thinly sliced

Half pound of pork belly sliced and marinated in corn flour and soy sauce for about 30 minutes.

Some finely chopped coriander

method

Boil a pot of water and then throw the dough in pinch by pinch. What it flows it means it is cooked, drained and set aside.

In a food processor, throw the entire pesto sauce ingredient in except the olive oil. Turn on the processor and slowly stream the olive oil in to make it into a puree like paste.

As for the tom yum broth, mixed everything in a pot boil it until it becomes half a cup and then strain it.

Heat up a pan or wok and add in 1 or 2 tbsp of oil and then add in the pesto ingredient, when it is fragrant, add in the meat and cooked until it is no longer pink. Next add in the mushroom and then followed by the tom yum broth. Turn down the heat and let it simmer until it thickens.

Turn up the heat again and put in the cooked dough. Toss it and mixed well for a couple of minutes and then add in the chopped coriander.

Kim Chi Soup

1/2 lb of pork belly, cut into small cubes
1 small yellow/red onion, thinly sliced
1 cup of old kim chi, diced
1/2 cup of kim chi juice, left over at the bottom of the jar
1/2 block of soft tofu, diced into 1 inch cubes
2 garlic cloves, minced

500 ml water
1 tsp of grated fresh ginger
2 scallions, thinly sliced
1 tbsp of sesame oil

method

Heat a pot and add in the sesame oil, followed by garlic, ginger. Saute until fragrant then add in pork. Once pork is cook add in onions and kimchi and the juice. Cook for about 3 minutes before adding in the water. Once the onions and kim chi are more translucent add the cubes of tofu to the soup and gently fold them into the red soup. Let the soup simmer for another 10-15 minutes. Garnish with sliced scallions.

In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup, salt and Kahlua or Coffee Oil. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat. Bake in oven for 5 minutes. Remove from oven and let cool completely before breaking into pieces

This isn’t a movie about a woman whose name is Soraya M. and who got hammered for drinking too much. After watching this movie, you fucking wish you could slap 9 7 all the stupid Muslim guys in the middle east, Iran to be precised; a very powerful movie that gives you an insight on the social standing of women there. This is definitely of the better shows I have seen this year and a real shocker too because this is based on a true story. Imagine being falsely accused of adultery, toned to death and the body was not even allowed to be buried but cast at the side of the river to be eaten by some wild dogs. This is just a matter of opinion, for me I think there are some seriously flaws in the Islamic Syariah laws. When being accused of a fucking crime, a man doesn’t have to prove their innocence but the accuser have to prove he is guilty. The other way one when a woman is accused, she have to prove her innocence instead of letting the accuser showing evidence of her wrong doings.

Poor storyline, trying so very hard to inflict humor but all failed miserably. Even Billy Zane in his finest state couldn’t salvage this crap.

I think putting Woody Harrelson and Jesse Eisenberg together is a great because they provide the comic relief from different angle and when you think you’ve already have a winning team up, Bill Murray shows up to nail the victory. This movie is a fun and smart zombie flick which has raised the bar for zombie related movies. It can be a little dry when they are not killing anything but snappy narration that Jesse Eisenberg provide was enough to take off the edge. In my honest opinion, most of us have never had any high expectation when it comes to zombie movies and that is the reason why this movie is good.

But this has got to be the worst zombie movie ever made. Zombies farm humans to work for them and for food. How fucking stupid can that get? Not only the actors are crap, the scripts and everything about it spells out crap. This is far worse than a film made by a 10 year old.

P.S. Every time i see that guy Slither's face in the movie I wish I could smash his fucking smirk away.

Then again I was slightly wrong because it has a little more that those two aforementioned series doesn’t have - all the drama crapola that is inherent to all TVB dramas. It started off shaky and ended off crappy, what can I say it is totally a (40 minutes x 20) 800 minutes worth of wasted time if you watch this.

It’s like walking into a big budget B grade movie filled with cast that usually are cast as cameos. I mean King of Fighters have been one of my favorite video game and to watch this show destroy the image of the game characters is just pure painful. Once again this isn’t the worst video game based movie but it is pretty close to the worst. The setting is far too complicated and you might fall asleep listening to those crappy actors explaining to you in their dry dialog that seems like it was written by some shitty amateur script writer. Nice going director Gordon Chan, you’ve just ruined your career with this crap.

The lesson we never fucking learn is that movies based on a fighting video game are usually crappy and this movie isn't going to change that fact. The characters looks believable except for the Kazuya character; Nina having a threesome with her sister and Kazuya is brilliant, they should have did more on that and that would have made this show worth watching. On the brighter side this isn't the worst video game based movie because the 1994 Street Fighter that Jean-Claude Van damme & Kylie Minogue stars in holds that spot. I'm gonna do this a little differently because I didn't follow any recipe when I did this, I just took and add in whatever I have in my fridge and kitchen, so this is pretty much a trial and error thing but it turned out pretty nice. My guests cleaned their plates under 20 minutes which is a lot faster then the time I took to cook this.

method

Firstly I skinned two large fish of my choice and then I combine Kaffir Lime Leaves, Coriander roots, lemon grass, sliced ginger and coarse salt to remove the fishy smell. Placed them all in a dish for about an hour.

After that, I wish away the coarse salt and begin to prepare the fish for marination. I stuff into the belly of the fish : Kaffir lime leaves, lemon grass, sliced ginger, crushed garlic.

Once the fishes are stuffed, I tighten it with some spring onion. This is to stop the stuffing from falling out.

Then I marinade the fishes with this combination: Tamarind paste juice, fresh ginger juice and some chili padi. Marinade each side for an hour.

Next I move on to make the sauce for the grill fish. What is needed are 2 large Onions, 4 shallots, 3 red chili, 2 chili padi, 1 inch of belacan, 3 slices of assam gelugur, petai peeled and sliced half, sugar, salt to taste. In a food processor I ground everything except the petai and assam gelugur.

In a pan heat up some cooking oil and throw in the ingredients that had been grounded, followed by the assam gelugur. Fry until fragrant and then dump in the petai and then seasoned with sugar and salt to taste. Occasionally add in water if it becomes too dry. Taste it to determined the level of sourness that you like. Once it hits the level of sourness you like, take away the assam gelugur. Keeping it in will only makes it even sour. Once this is done set aside.

after two hours of marinating, drain the fish and wrapped it in banana left.

Placed the fishes inside a pocket made by aluminum foil and then grill one side of the fish for 6 minutes followed by 4 minutes on the other side. remember to grease the inside of the pocket before placing the fishes in. let the fish rest for about 5-8 minutes before opening the pocket.

Placed it on a serving dish and then pour generous amount of sauce you made earlier on top. Serve it immediate. You can also sprinkle some chopped coriander on top for more flavor.

2tbsp cooking oil
1tsp mustard seed
1tsp fennel seed
2 dried chili cut into pieces of 3cm
1 medium onion thinly sliced
2 sprigs of curry leaves
1/2 asafoetida powder
500g carrot scrape and cut into 2cm cubes
1/5 turmeric powder
1 tsp salt
1/2 tsp sugar
1/2 cup water
50g granted coconut

method

Heat oil in pan and then fry the mustard seed, fennel seed and dried chili followed by the onion, curry leaves and asafoetida powder. saute till onion is golden brown. add carrot, spices, salt, sugar and water and cook until carrot is tender. add in the coconut and cook over high heat for 2 minute dish out and serve.

method

1. combine all the sauce ingredient in a bowl and mix well.

2. place lettuce in a serving dish top[ with prawn and drizzle with the cocktail sauce. Serve immediately.

3 rolls egg tofu
4 mushrooms
2 stalks spring onion
1 chilli
1/2 teaspoon minced garlic
50g minced meat
1 tablespoon potato starch (mixed with 2 tablespoons water)
1 egg
1 tablespoon chopped spring onion

Seasonings :

11/2 tablespoons spicy bean paste
1 tablespoon sugar
1 tablespoon oyster sauce
2 tablespoons sesame oil
1 tablespoon water

method

1. Cut each roll of tofu into 6 pieces. Soak mushrooms to soften then cut off stems. Chop mushrooms, spring onion and chili.

2. Heat 1 cup of oil and deep-fry tofu till golden brown. Remove and drain oil.

3. Using 1 tablespoon of oil, fry minced garlic and the white portions of spring onion till fragrant. Add mushrooms, chili and minced meat to fry well. Stir in Seasonings then thicken with potato starch water. Turn off the heat when the ingredients are cooked through.

4. Heat a hot plate/ pan and pour in 1 tablespoon of oil. Beat the egg and pour it evenly on the hot plate. Lay tofu and mushrooms mixture on top then scatter the chopped spring onion before serving.

I know there's a lot of low down on this highly anticipated flick but the good point is that the heroin Io (Gemma Arterton) is hot and Every time i look at her I feel like sinking my teeth in her ass. I haven't watched it yet in 3D but a lot of critics are saying that it sucks ass but after watching it not in 3D, all I wanna do is re-watch it in 3D.

Update: everyone's right, the 3D version SUCKED!

Watching this movie is a dread, Confucius may be a great philosopher but I bet he didn’t want to be depicted as a boring school teacher that the kids these days doesn’t give a hoot about. Please avoid this show at all cost unless you wanna be bore outta your brain.

The first time I saw this movie, I entered into the cinema with a high expectation and not be dragged into the long and winding story. Thanks a lot to the TV series Terminator: The Sarah Connor Chronicles, it has turned the whole Terminator franchise in a drag. No wonder the movie left me all dry and not high. Staying clear of that fucked up TV series and re-watching this 4th installment on Blue-ray, I finally got what the film makers wanna bring into this flick. The second time round, it was entertaining and at the same time inspiring. The movie is all about second chances and I am glad I gave this flick a second chance because I love it.

Prep Time: 20 minutes

½ a chicken, chopped into bite-sized pieces
5 dried Chinese mushrooms, soaked
5 slices ginger
2 stalks spring onion
1 tbsp rock sugar
100ml light soy sauce
1 can (325ml) Coca-Cola
½ tsp salt
1 tsp sesame oil

method

1. Combine chicken, mushrooms, ginger, spring onion, rock sugar and light soy sauce in a saucepan. Bring to a boil. Reduce the heat and simmer for 8-10 minutes.

2.Add Coca-Cola, salt and sesame oil and continue to simmer for 10-15 minutes or until gravy is reduced. Serve immediately.

Mah Po Tofu which means Grandma’s Tofu in some fucking Chinese dialect which I am not sure but this is actually a very common dish but what made this one special is because I used freshly harvested scallion from my garden for this one.

ingredient

Prep Time: 25 minutes

350g soft bean curd (cut into 2cm cubes)
100g minced pork
6 cloves garlic, chopped
4 slices ginger, chopped
1 red chili, diced
2 stalks spring onion, chopped
1 tbsp Sze-Chuan hot bean paste

If you cannot find Sze-Chuan hot bean paste just use one tbsp pf bean paste and one tbsp of chili powder to ground.

2 tbsp cooking oil
4 tbsp soup stock

Seasoning:
1 tsp light soya sauce
1 tsp dark soya sauce
1 tsp sesame oil
1/2 tsp sugar
1/4 tsp pepper

For thickening:
1 tbsp corn flour
2 tbsp water

method

1. Marinate minced pork with 1/2 tsp salt, 1/2 tsp sugar, 1 tsp oil and 1 tbsp corn flour for 10 min.

2. Heat the 2 tbsp oil in a wok. When hot, fry the garlic, chili, ginger and the hot bean paste till fragrant. Add in the marinated minced pork and continue to fry for a while more. Sprinkle 4 tbsp water.

3. Add in the bean curd cubes and seasoning; leave to simmer over low heat for 2 minutes then thicken with corn flour. Keep stirring for 2 minutes and add the chopped spring onions before serving

What the fuck is it?

Welcome to the Fucking Cook’s Garden; this is the garden where he fucking grows herbs and spices, hopefully they can be of use in his culinary experiments. He ain’t Martha Stewart or that fucking dude from River Cottage; he is just a guy who loves adding freshly plucked herbs and spices in his dishes. There won’t be many articles here just basically a show and tell section if you are into gardening.

A close up of some fucking plants that cannot be eaten but the river rocks are collected from a hicass town called Sungai Lembing which is about 45 clicks from town.

Inhabitants of the fucking Cook's garden. These two fucking snails are call Adam and Eve even though they don't fuck each other because they are asexual, that means they bang themselves.

This is where I grow my lemongrass and mint leaves; I use a lot of them to make lemongrass shots.

This is my new addition to the garden, a fucking coconut tree. Hopefully I can brew up some Pina Colada in the future.

I brought this yellow flower back from a river bank near Sg Lembing and it has been a permanent additional here. It also did a good job at attracting insects.

Charcoal Sweet Corn with Garlic and Chili

It was another Saturday night and it was movie night at my place; being the host I had to come up with something for my guest tonight so I opt for this simple and tasty treat.

ingredient

Prep Time: 15 minutes

Cook Time: 30 minutes

Unshucked corn cobs
Butter
Ground Garlic (depending on how much corn you are doing)
Salt, pepper, and chili powder/paprika

method

Soak the corn cobs in the pot of water -- leave the husk on -- and let them sit for an hour or two. This will make the corn cobs nice and moist.

Using a campfire, drop them into the white coals on the edge of the fire ring. Turn the corn cobs once in a while, and let them cook for about half an hour. You'll know they're done when the husk is dry and burnt.

Meanwhile mix the garlic and the butter.

Remove the corn cobs from the grill and let them sit for a few minutes to cool a little. Don't let them get cold. Peel the husk all the way back and use it for a handle.

Brush the cob with the garlic and butter spread and then sprinkle with chili powder or paprika.

If you love the sour taste of red wine and the smell of oregano jammed in a sub sandwich, this is the sandwich to have. The marinade may take a while so if you plan to have it for dinner, you could marinade it in the morning.

Prep Time:1 hour
Marinade: 8 hours

½ pound sirloin steak, cut in strips
1 cup dry red wine
1 tbsp dried parsley
1 tsp dried oregano
½ tsp salt
½ tsp ground black pepper
1 tbsp minced garlic
1 tbsp vegetable oil
1 cup sliced mushrooms
1 cup chopped onion
1 tbsp cornstarch
2 tbsp water
French loaf/ Baguette
Some chopped Coriander

method

Place steak into bowl or glass dish. Mix together red wine, parsley, oregano, salt, pepper and garlic. Pour over steak and marinate for 8 hours in the refrigerator. Heat oil in a large skillet; sauté mushrooms and onions until soft. Remove vegetables from skillet and set aside. Remove steak (reserve marinade and set aside )from the marinade;. Brown in the same skillet until the way you desire the steak to be cooked. Remove steak and set aside. In the same skillet add marinade, mushrooms and onions in and simmer for 30 minutes over low heat. Dissolve cornstarch in water. Add to the pan juices in skillet. Cook until thick, stirring constantly. Turn off heat and add in the steak and mix well. Prepare the French loaf and some with freshly chopped Coriander.

I think this is my very first Bollywood movie this year or should I say this decade or should I say very first to finish from opening till end. I've never been fond of these tree hugging MTV style genre but after watching Brick Lane and Slum dog Millionaire, I thought there'll be something worth watching but I was fucking wrong. Seriously I didn't enjoy the movie even though its theme revolves around sex, drugs and prostitution. The theme was there but there wasn't any nude or sex scene, there wasn't even any sexy scene that could give me a tinge of hard on.

A Bengali love story film by Monica Ali who is I think a Bengali that depicts the life story of a girl who didn’t have a chance to choose her life partner. After the intro the story takes place 18 years after her marriage to that guy and she is now living in London with 2 kids and her husband. Seriously, when I first saw the husband, I thought to myself if I was her, killing myself and going to hell would be like a vacation. But the story takes a turn in the end. This story also relates about Islam, extremist Muslim, marital affairs and the post 9-11 reactions towards Muslim. Seriously, if you looking for a different kind of love story, this is it; this is the shit here.

This is a damn easy appetizer for your Chinese New Year reunion dinner of any sort. Tasty and simple to make.

Prep Time:10 minutes

1 pound fresh lotus root
3 tbs each soy sauce and white vinegar
2 tsp sugar
Pinch salt
2 tsp sesame oil

method

Peel lotus root, discard both ends, and cut into super thin slices. Place in cold water to prevent discoloring, but drain before cooking. Bring a pan of water to boiling. Add lotus root and cook for 2 minutes. Lotus root should be crisp-tender. Drain, rinse with cold water, and drain again.

In a plastic bag, mix the soy, vinegar, sugar, salt, and sesame oil. Place drained lotus root in the bag and seal.
Refrigerate, turning bag occasionally to distribute marinade, for at least 1 hour or as long as 8 hours.

To serve, arrange lotus root on a serving plate and pour over any remaining marinade.

400g chinese arrowhead roots (Ngaku), peeled and sliced
100g pork/chicken cut into pieces
2 pieces fermented red bean curd
1/3 tbsp sugar
2 tbsp chopped garlic
cooking oil
water

Garnishing
1 stalk spring onion, chopped

method

Heat up oil, saute garlic until fragrant.

Add in pork/chicken, stir-fry for 2 minutes.

Add in fermented red bean curd and stir-fry until aromatic.

Add in arrowhead and sugar, stir well.

Pour in the water until can cover the arrow head.

Simmer until arrowhead is cooked and the sauce is thickened.

Dish up and garnish before serve.

Marinade in:
½ tsp pepper
1 tbsp oyster sauce
1 tsp light soy sauce
Sea salt
½ a beaten egg
3 tbsp corn flour

Sauce ingredients:
2 tbsp marmite yeast extract
1 tbsp maltose
1 tsp honey
1 tbsp light soy sauce
½ tsp chicken stock granules
100ml water

method

Season chicken with marinade for at least an hour. Deep-fry in hot oil till golden or until cooked through.

Dish out and drain from oil.

Heat 1 tablespoon oil in a wok and pour in sauce ingredients. Cook over medium low heat until sauce is thick.

Return pre-fried chicken to the wok and toss until well coated with the sauce. Dish out and serve.

I love a good laugh and I love this show. A bunch of guys throwing their friends a bachelor party in Vegas and things got really wrong when a inexperienced drug dealer sold them roofy instead of ecstasy. This movie reminds me of Dude, Where's My Car? But this one is more believable. Even after the show, I wished there was more. This has got to be in my movie collection.
